2 tsp olive oil
random veggies (red pepper, yellow pepper, tomato, etc.)
1 cup quinoa (rinsed and drained)
1 garlic clove, minced
2 cups veggie broth (or water)
2 large eggs
1 cup milk
2 cups shredded cheddar cheese
1. Heat oil in medium saucepan on medium heat, add veggies. Cover and cook for 5 mins. Str in quinoa, garlic and continue cooking uncovered for 3-4mins.
2. Add 2 cups of veggie broth, cover and reduce heat to medium-low and simmer 20-30 mins until most of the liquid has absorbed. Remove from heat and let sit for 5 mins.
3. Preheat oven to 350F, coat casserole dish with cooking spray. Whisk eggs and milk in large bowl, stir in quinoa mixture and cheese.
4. Bake for approx. 45mins.
