• 1 pie crust (I use the pre-made kind from the grocery store. Way easier.)
  • small onion
  • 3 eggs
  • 1/4 cup milk
  • 1/4 cup half&half cream
  • 1 cup shredded cheese (mozzarella or cheddar works well)
  • salt and pepper to taste
  • Random veggies

Mix all your ingredients in a giant bowl, then fill in the pie crust and bake in the oven at 375F for 45 minutes or until your knife comes out clean. Think of this as a giant omelette, and add whatever you like. My favourite veggies to add include spinach, mushrooms and bell peppers.

This is one of my FiancĂ©’s favourites!! He gets super excited when he sees it in the fridge. Big thanks to my friend Cindy for sharing this recipe with me a few years ago.


Cheesy Broccoli Quinoa


1 cup quinoa
1 1/2 cups vegetable broth (or water)
2 cups broccoli, chopped
1 cup cheddar cheese, shredded
Salt and Pepper to taste

1. Bring the quinoa, broth and broccoli to a boil over medium heat, reduce heat and simmer covered until the broth has been absorbed and the quinoa is tender. (13-17 mins)
2. Mix in the cheese, let it melt and season with salt and pepper.

Super easy, healthy, and delicious.
