- 1 pie crust (I use the pre-made kind from the grocery store. Way easier.)
- small onion
- 3 eggs
- 1/4 cup milk
- 1/4 cup half&half cream
- 1 cup shredded cheese (mozzarella or cheddar works well)
- salt and pepper to taste
- Random veggies
Mix all your ingredients in a giant bowl, then fill in the pie crust and bake in the oven at 375F for 45 minutes or until your knife comes out clean. Think of this as a giant omelette, and add whatever you like. My favourite veggies to add include spinach, mushrooms and bell peppers.
This is one of my Fiancé’s favourites!! He gets super excited when he sees it in the fridge. Big thanks to my friend Cindy for sharing this recipe with me a few years ago.
Cheesy Broccoli Quinoa
1 cup quinoa
1 1/2 cups vegetable broth (or water)
2 cups broccoli, chopped
1 cup cheddar cheese, shredded
Salt and Pepper to taste
1. Bring the quinoa, broth and broccoli to a boil over medium heat, reduce heat and simmer covered until the broth has been absorbed and the quinoa is tender. (13-17 mins)
2. Mix in the cheese, let it melt and season with salt and pepper.
Super easy, healthy, and delicious.
